*Ramadhaaan from Dubai with Nishat Sait on Hello Mumbai*

Ramadan is a special time of the year where the blessings of Allah are abundantly bestowed upon the believers. Considered the holiest month of the year, Muslims believe this is when the Holy Quran was “sent down from Heaven, a guidance unto men”.
Away from our homeland and families, in our second home, the UAE, Ramadan is awaited with much eagerness and celebrated with joy, during which we ease into a lifestyle of spiritual transformation. Ramadan in Dubai, you get to see a whole new side to the city, learn about the local culture and experience traditional festivities.

During Ramadan here, non-Muslims pay respect to those fasting and eating, drinking in public is avoided.

We finish our suhoor at around 3:50am and get into work / school routines and then break our fast with the Maghrib Azaan at around 7:10pm.

At home, in the evening, our kitchen gets busy in the quiet rhythm of Iftar preparation. Families and friends are invited home to experience the joy of opening fasts together and praying the night prayers (Taraweeh and Tahajjud) in congregation at the mosques.

Sharing with you one such Iftaar spread made with love for my dear ones – showcasing the blend of cultures here with a mix of Indian, Pakistani and Arabic tastes – with ganji, assorted fruits, falooda, lebnah zaater and cheese fatayer puffs, foil chicken, cutlets, dahi chaat and mix pakoras… followed with the Emirati mandi for dinner.

One experience not to miss here is the Ramadan tents that are put up which have stunning interiors where modern meets traditional, with extensive Iftaar buffet spreads.

Now with *Eid Al Fitr* just around the corner, along with the festivities of Eid, our hearts are feeling the pain to bid farewell to this blessed month of Ramadan…

Sharing one UAE Desert recepie

*Kunafah*

Ingredients
Kunafah vermicelli 2 cups
Grated mozzarella cheese 1 cup
Double cream 1/2 cup
Butter 200 g
Pistachios 20 to 30 crushed
Orange food colour 1 tsp
Cake pan or oven dish (greased)
To make sugar syrup #
Rose water 1 1/2 tbs
Lemon juice 1/2 tsp
Sugar 2 cups
Water 1 cup
Method #
Make the sugar syrup add sugar, water and lemon juice in a pan let the sugar dissolves in the water stir well, make sure that the sugar syrup should not very thin or thick consistency. Switch off the stove and add the rose water and keep aside.
2) Melt the butter and mix kataifi with butter and then divide into 2 parts, one is for topping and other part is for the base.
3) Take orange food colour and little butter to grease the pan or dish then add the half part of the kataifi and press down firmly.
4) spread the cream mixture evenly over the base.
5) Add the Mozzarella cheese over the kataifi layer. You can add any grated cheese on the top of the kataifi.
6)add the remaining kataifi on the top and again press down firmly and tuck in the sides.
7) Bake for 15 to 20 minutes about 180 degrees Celsius. Once the sides started turning light brown, remove it from the oven.
8) now add the sugar syrup on the top while hot leave for 15 minutes to settle.
9) Garnish with crushed pistachios.
10) Kunafah is ready,slice and serve.. Enjoy
